Macaroni and Cheese or Mac and Cheese or Mac n’ Cheese, is a family favourite. Although nice on its own, I sometimes like to add a handful of veggies to give it extra flavour and bulk. Then with a little grated Parmesan cheese and cracked black pepper on top you have a simple and satisfying meal. And you only need one pot to make it – too easy!

Here is my easy, cheap, fast and fabulous Mac and Cheese recipe. It is perfect when you want a comforting meal without using lots of cooking equipment, whether you are at home, travelling, backpacking or camping.

Why You’ll Love This Mac and Cheese

·       One-pot cooking: You can cook the pasta and make the cheese sauce in the same pot, which means less washing up.
·       Budget-friendly: The main ingredients are milk, macaroni and cheese.
·       Quick and easy: It takes approximately 25 minutes from preparation to serving.
·       Creamy and cheesy: Milk and melted cheese create a rich sauce that coats the macaroni.
·       Easy to customise: I like adding bacon and a handful of veggies for extra flavour.
·       Great for travelling, backpacking or camping: You only need a pot and a stirring spoon to make this simple meal.

What Is Mac and Cheese?

Mac and Cheese is a pasta dish made with macaroni pasta and a creamy cheese sauce. It is a popular comfort food that can be served as a main meal or a side dish.

For this recipe, I cook the macaroni directly in milk before adding shredded cheese. This makes it a convenient one-pot meal because there is no need to use a separate pot for the pasta or sauce. You can enjoy it as it is or add bacon and vegetables if you want to give it extra flavour.

Ingredients and Substitutions

You only need three ingredients to make my Mac and Cheese, plus a couple of optional ingredients. These portions are for 1-2 people.

·       2.5 cups milk (about half a litre): Milk provides the liquid for cooking the macaroni and forms the base of the creamy sauce.
·       1 cup elbow macaroni: This is the pasta I use for this recipe. Other small pasta shapes may work, although the cooking time and amount of liquid needed may vary.
·       2 cups grated cheese: Choose your favourite cheese, such as cheddar or tasty cheese. Shredded cheese melts into the hot pasta and milk to make the sauce.
·       Parmesan cheese (optional): Sprinkle it over the finished dish for extra flavour.
·       Cracked black pepper (optional): Add a little on top before serving.

Equipment Required to Make this easy One Pot Mac and Cheese

You do not need much equipment to make this one-pot meal.

·       Large pot: For heating the milk, cooking the macaroni and making the cheese sauce. A pot with a heavy base can help distribute the heat more evenly, especially when cooking on a camp stove.
·       Stirring spoon: For stirring the pasta and cheese.
·       Bowl and fork or spoon: For serving and eating.

How to Make Macaroni and Cheese While Travelling, Backpacking or Camping

I like simple recipes when travelling, and this Mac and Cheese is ideal because everything cooks in one pot. You do not need a separate saucepan for the pasta or cheese sauce.

If you are camping, use a stable cooking surface and keep the heat under control. Milk can boil over or stick to the bottom of the pot if it gets too hot, so watch it carefully and stir frequently.

Dry macaroni is convenient to pack when travelling, backpacking or camping. Milk is another story, keep fresh milk refrigerated until you are ready to use it. An option could be to travel with a milk powder that needs water to turn it into liquid milk.

How to Make Mac and Cheese

Step 1: Bring the Milk to a Boil

Pour the milk into a large pot and bring it to the boil. Watch the pot carefully because milk can boil over quickly.

Step 2: Add the Macaroni

Add the elbow macaroni to the boiling milk. Stir constantly as the pasta cooks for approximately 10 minutes, or until it is cooked.

Keep stirring and watch the heat to help prevent the milk from sticking to the bottom of the pot.

Step 3: Add the Cheese

Reduce the heat and add the shredded cheese. Stir until the cheese has melted and the macaroni is evenly coated in the creamy sauce.

Step 4: Add Optional Toppings

If you like, sprinkle Parmesan cheese and cracked black pepper over the top.

Step 5: Serve

Serve the Mac and Cheese while hot. Enjoy it on its own or during cooking, add cooked bacon and vegetables if you want extra flavour and to make the mixture go further. Also adding vegetables is a good way to get kids (and grown ups) to eat veggies without really knowing it!

Tips for Making Mac and Cheese

·       Stir regularly while the pasta cooks in the milk: This helps prevent the milk from sticking or burning at the bottom of the pot.
·       Watch the milk carefully: Milk can boil over quickly, so reduce the heat if it starts rising too much.
·       Use shredded cheese: It is easy to stir into the hot pasta and milk and melts quicker.
·       Reduce the heat before adding cheese: This helps the cheese melt into the sauce without exposing it to excessive heat.
·       Choose your favourite cheese: I think cheddar or tasty cheese works well in this recipe.
·       Add extras if available: Cooked bacon and vegetables can make the meal more substantial, but they are optional.
·       Serve straight away: The sauce is best enjoyed while the dish is freshly made. I find it can get a bit ‘gooey’ if you don’t.

Mac and Cheese Serving Ideas

This Mac and Cheese is satisfying on its own, but you can serve it with a few simple additions.

·       Parmesan cheese: Sprinkle it over the top for extra cheesy flavour.
·       Cracked black pepper: Add a little for a savoury finish.
·       Cooked bacon: Stir through or sprinkle over the finished dish.
·       Vegetables: Add your favourite vegetables if you have them available.
·       A simple side salad: A salad makes a nice accompaniment to the creamy pasta.

What to Do with Mac and Cheese Leftovers

If you have leftover Mac and Cheese, transfer it to a clean, covered container and refrigerate it promptly. Use it within 3–4 days, or freeze it for longer storage.

The sauce may thicken as the pasta absorbs more liquid while cooling. When reheating, add a small splash of milk and stir gently to help loosen the sauce.

Reheat thoroughly until hot throughout. If you are travelling, backpacking or camping without reliable refrigeration, do not keep leftover pasta at room temperature for extended periods.

Mac and Cheese FAQs

Can I make Mac and Cheese in one pot?

Yes! I cook the macaroni in milk and then add the cheese to the same pot. This means fewer dishes to wash afterwards, which is particularly handy when camping.

How long does Mac and Cheese take to make?

Allow about 5 minutes for preparation and 20 minutes for cooking, giving a total time of approximately 25 minutes. The pasta itself takes around 10 minutes to cook in the milk, although the full cooking time can vary depending on your stove and how quickly the milk comes to the boil.

What cheese is best for Mac and Cheese?

I like using cheddar or tasty cheese, but you can choose your favourite shredded cheese that melts well into the sauce.

Why is my cheese sauce too thick?

The pasta can absorb liquid as it cooks and sits. If the sauce becomes too thick, try stirring in a small amount of milk while the dish is still hot.

Can I add bacon and vegetables?

Absolutely! I like adding bacon and a handful of veggies for extra flavour. You can use whatever vegetables you have available, although the quantities will depend on your preference.

Can I make Macaroni and Cheese while camping?

Yes. This recipe uses one pot and a stirring spoon, making it suitable for a basic camping kitchen. Take care when heating milk over a camp stove, as it can boil over or stick to the pot.

Can I use a different pasta shape?

I use elbow macaroni for this recipe. Other small pasta shapes may work, but they can absorb liquid differently and may need a different cooking time.
