Apricot Chicken was one of my favourite dinner meals growing up. But then, it became unpopular! Or, should I say, people preferred other chicken dishes over it.
It was only recently that my love for this dish was re-ignited. I happened to be standing in the tinned food aisle at the supermarket, and for some reason, the tinned apricots jumped out at me! And I thought, what dish could I make with apricots? Initially, I was thinking of a desert, but then remembered Apricot Chicken.
My Apricot Chicken recipe is the one my mum used – and I think everyone else’s mum! It is easy with only a few ingredients. Best though to be cooked slowly, around an hour as all the flavours have time to be absorbed by the chicken. Apricots are a great pairing with chicken, same with mango – I think!
Ingredients required to make Apricot Chicken are chicken, French Onion Soup Mix and apricot halves in juice or necter. Enjoy.
Apricot Chicken
Notes
This recipe is easy to make. Simply put all ingredients into a pot. Then into heat (oven, stove top, over coals) and cook until chicken is cooked through and tender.
Ingredients
- 1 chicken breast or thigh fillet (I use one per person)
- 1 packet of French Onion Soup Mix
- 1 tin Apricots
Instructions
- In a pot put all ingredients. Chicken on the bottom and pour soup mix and apricots over. I usually mix the soup mix into the apricot necter.
- If using an Oven: Cover and put in oven for about half an hour. Check and if chicken cooked through, it is ready. Otherwise return to oven and cook for another 15 minutes.
- If using a stovetop: Cover and cook on medium heat until chicken is cooked through.
- Serve with vegetables and/or on a bed of rice.
