When I think of a flan, I think of a baked egg custard dessert coated in a sticky sauce, and yes, I’d be right, but a breakfast flan is a different kettle of fish. Yep, a breakfast flan is a savoury, egg-based baked dish similar to a crustless quiche or frittata. The difference with the breakfast flan is it is loaded with breakfast ingredients like vegetables, meats and cheese. And don’t forget the eggs.
Ingredients to Make a Breakfast Flan
Most of the time I make my savoury breakfast flan as a vegetarian dish, but occasionally I add bacon.
The ingredients in my breakfast flan include:
- a wrap – this acts like a crust.
- eggs x 3.
- vegetables/salad items – sweet potato, onion, tomato and spinach.
- cheese – feta and grated tasty cheese.
- bacon pieces – sometimes I add bacon pieces
What Equipment Do You Need to Make a Breakfast Flan
- chopping board and a knife to chop vegetables.
- whisk or fork to whisk eggs.
- frypan to cook vegetables and bacon (if adding).
- oven friendly bowl that fits your wrap.
- plate, knife and fork to eat your flan with.
How to Make a Breakfast Flan
- Start by gathering ingredients.
- chop onion, tomato and sweet potato into small pieces. Lightly fry in a frypan.
- add spinach and let shrink as it it heats.
- while spinach and other ingredients are cooking, prepare eggs in your wrap.
- in a bowl that fits the wrap, lay the wrap, break eggs into wrap and whisk lightly.
- add cooked mixture into the eggs, stir lightly so eggs are mixed through the mixture. Add feta if using this ingredient (it doesn’t need cooking).
- sprinkle with grated cheese and put into oven. Bake for 15-20 minutes or until egg cooked – almost solid. Note: eggs will continue cooking with the heat in the mixture even after taking out of the oven.
- Voila – breakfast (or brunch or dinner) is served.

- vegetables of choice - onion, tomato, sweet potato, spinach
- bacon (optional)
- feta cheese and tasty cheese
Instructions
- chop vegetables and fry in fry pan adding spinach last as it doesn't take like to melt down.
- prepare base - in a baking dish place wrap and break 3 eggs onto wrap and whisk eggs lightly.
- add cooked vegetable mixture into eggs and mix. add some feta and mix.
- place grated cheese on top.
- bake in oven for 15-20 minutes.
- serve and enjoy.
