A frittata is an egg-based Italian dish similar to a crustless quiche. Simply add a variety of tasty ingredients such as vegetables, meats and cheeses and you have not only a tasty meal but a healthy one also. A great thing about frittata is they only need a few ingredients and utensils to make. It is a very friendly dish to make while travelling and staying in hostels, hotel rooms with a kitchenette or while camping. This recipe of sweet potato, blue cheese and spinach combines really well together to make a tasty dish. Ingredients are also relatively cheap to purchase so this recipe won’t break the bank. Here is my easy, cheap, fast and fabulous Sweet Potato, Blue Cheese and Spinach Frittata recipe. Although the frittata is very nice on its own, you can serve it with salad.

Sweet Potato, Blue Cheese & Spinach Frittata

Notes
** double ingredients for 3-4 people
Utensils required:
Chopping board and knife
Fry pan
Whisk or I use a fork
dish for mixture to put in oven
Ingredients
- 10g butter
- 1 sweet potato
- 1 cup spinach leaves
- 50g blue cheese
- 4 eggs, lightly beaten
- Salt and pepper to taste
Instructions
- Preheat oven to 180oC
- In a pan, melt butter and lightly fry sweet potato until they are golden or softened - 10 to 15 mins
- Light beat eggs, then add blue cheese and spinach leaves and mix mixture
- Once cooked, pour sweet potato into dish and pour egg mixture over the sweet potato
- Bake in oven 20-25 minutes. Test by sticking a fork in the middle and if solid it is cooked. If still runny, leave in oven a little longer.
- Serve with salad of your choice
