Porcupine Meatballs are a fun twist on the traditional meatball recipe. They are a tasty mix made of mince, rice and onion baked in a rich tomato sauce. They get the name because when the rice is added and the mixture is rolled into balls, the rice sticks out and the meatballs resemble a little ‘porcupine’. No matter what they look like, they are delicious and ready in under an hour. And can be served on a bed of mashed potato, pasta or rice.
To make for more people, double ingredients for 4 people, triple for 6 people.
Bowl to mix mixture.
Casserole dish, dutch oven - a dish with a lid.
Knife for chopping onion.
- 250g mince of your choice
- Small brown onion, chopped finely
- 1/4 cup uncooked rice
- Can tomato soup, or I have used pre-made, bought pasta sauce
- 2 cups water
- Combine mince, rice and chopped onion in a bowl.
- Shape mixture into balls and put into a casserole dish with a lid.
- Pour can of tomato soup and water onto the meatballs.
- Cook at 180oC for 30-40 minutes or until meatballs are cooked through.
- Serve on a bed of mashed potato with veggies or pasta or rice.
