Who doesn’t love pancakes for breakfast of a morning? Here is my easy pancake recipe.

- Cup Self Raising Flour
- Tablespoon sugar
- 1 egg (lightly beaten)
- 3/4 cup milk
- 50 g butter
- Gather all ingredients.
- In a bowl, whisk flour and sugar. Add in the egg and beat and then milk a little at a time until batter is smooth and lump free.
- In a hot pan or flat grill add a little butter and allow to met. Pour batter over melted butter. You can make as big or little as you like.
- When large bubbles form on the surface, flip the pancake over and cook until lightly golden on the other side.
- Serve with your choice of topping - Maple syrup, butter and jam, often my choice, or icing sugar.
